Who, what and where

  • The server gives and explains the wine list to the party at the table.
  • The bartender pours the wine at the bar for glasses and carafes.
  • The server pours the wine at the table for bottles.
  • The wine bottle stays on the table in an ice bucket (for white)

Measurements

  • A whole has three thirds or four quarters. (3/3 o4 4/4)
  • Wine glasses are usually filled 2/3 full for a standard drink.
  • Some red wine glasses are very large and should only be filled 1/2 full.
  • When offering a taste of wine, fill less than 1/4 full.
  • Wine comes in 750ml or 1.5L bottles from Canadian liquor stores.
  • House wines usually come in a 12L box.
  • House wine is served by the glass (5oz or 142ml)
  • or by the half litre (17oz or 500ml) or litre (34 oz or 1000ml)

Steps for Serving Wine

  1. Show and explain the wine list to the guests.
  2. Write down the guests' wine order.
  3. Put in the order.
  4. Pick up the bottle and wine bucket (for white) from bar.
  5. Hold the wine with the base held steady on your service cloth on your palm.
  6. Show the label of the bottle to the guest and announce the wine.
  7. Cut the foil wrapper under the bulge and remove the foil.
  8. Pierce the cork with the corkscrew.
  9. Screw in the corkscrew and press down on the arms.
  10. Offer the cork to the guest.
  11. Wipe the top with your service cloth.
  12. Offer the guest a taste.
  13. If the guest approves, offer wine to the rest of the table.
